These scallops had to be pried open with a lot of effort since they are clasped shut with great force. Careful on that part, Shaun and his Dad worked together on the big ones with their dive knives.
It's harder than you think to get to this part of the scallop, but it's worth the effort! Make sure to clean out all the other inner parts and just leave this beautiful inner chunk of meat! :)
Seriously, the bigger scallops looked like muffins they were so big and fat!! :)
Bon appétit!! Now the scallop meat is ready to be cooked up or frozen for later.
